Potato bhaji recipe is a very simple and easy-to-make recipe made with curry leaves, ginger and garlic paste and potatoes. This tasty recipe is usually served with pooris and chapatis. Ingredients needed for potato bhaji recipe:

Potatoes- 1/2 kg ( chopped into cubes)
Curry leaves- 3
Mustard seeds- 1/2 pinch
Turmeric- 1/2 teaspoon
Salt- 1 pich
Oil- 1/2 tablespoon
Coriander leaves- 1/2 bunch (chopped)
Onion- 2 (chopped)
Tomato- 1 1/2 (chopped)
Ginger paste- 1/4th teaspoon
Garlic paste- 1/4th teaspoon
Red chilli powder- 1/2 teaspoon

Now, how to make potato bhaji:

First, take a pan and heat some oil over a medium flame.
Now, add mustard seeds to it and let it splutter.
Then, add curry leaves to the pan.
Stir for a few seconds and then, add some onions to it.
Once the onions turn slight brown in color add chopped tomatoes to the pan.
Then, cook all the ingredients with garlic and ginger paste.
Stir all the ingredients for a while and add potatoes, red chilli powder, salt and turmeric in the pan.
Again mix all the ingredients and cover the pan with a lid and keep the flame on high.
Make sure you check the pan occasionally to ensure it does not get burned.
Once the potatoes are cooked properly, garnish it with chopped coriander leaves.
Your potato bhaji is ready to be served.
