A few days back I shared with you the recipe of cooked rice idli and today I am back with another idli recipe, but this time the original idli recipe. I realised that I have shared the cooked rice idli recipe as well as the idli upma recipe, but I never shared the original idli recipe. So here I am today sharing this amazing recipe. This recipe will yield softer and tastier idlis as compared to any other recipe. Serve the idlis hot or warm with sambar and coconut chutney.

Here is a step by step recipe of the same.

Ingredients:
- Rice- 1 cup
- Parboiled rice- 1 cup
- Urad dal- ½ cup
- Water- ½ cup (For grinding the dal) + ¾ cup (for grinding the rice)
- Salt- 1 tsp.
- Oil- for greasing the moulds
- Water- 2 ½ cups for steaming the idlis
Procedure:
- Â Rinse the dal and rice separately under running water 2-3 times.
- Â Soak the rice and dal in separate bowls for 4-5 hours.
- Â Once the rice and the dal have soaked, drain the excess water from both the bowls.
-  Transfer the soaked dal to the grinder along with ¼ cup water and grind the dal. Now add the remaining ¼ cup of water and grind again.
- Â Transfer the dal batter to a big bowl.
-  Now add ½ or 1/3 of the rice to the grinder along with some water to make a smooth batter.
- Â Transfer the rice batter to the dal batter. Add the salt and mix well.
-  Cover the bowl with a lid and allow the batter to ferment overnight or 8-10 hours. Post fermentation the batter will  double up in size.
- Â Boil water in a pressure cooker or steamer.
- Â Grease the moulds with oil and fill the moulds with the prepared idli batter.
- Â Place the idli moulds in the steamer and cook for 10-12 minutes with the lid on.
- Â Once cooked, remove from the mould and serve the idli hot with chutney and sambar.
