Tired of eating plain rice? But can go without eating rice? Love Biryani but are a Vegan? There are plenty of times that we thought of rice as a blessing. It is the only grain which is 98% digestible. So let’s learn today how to make soya veg biryani.

Ingredients:
- 1 ½ cup Basmati rice
- 1 cup soaked soya granules
- 3-4 tbsp. ghee
- 1-inch cinnamon stick
- 2-3 green cardamom
- 3-4 cloves
- ½ tsp Shahi jeera
- ½ tsp cumin seeds
- 3 medium chopped onions
- 1 tbsp. ginger paste
- 1 tbsp. garlic paste
- 1 tbsp. coriander powder
- 1/4th tsp turmeric powder
- 1 ½ tbsp. red chilli powder
- 3-4 chopped large onions
- Salt to taste
- 1 cup green peas
- 2-3 chopped green chillies
- 2 tbsp. chopped coriander leaves
- 1 tsp Garam masala
- Sliced onions and fried
- Mint leaves
- Saffron soaked in 2 tbsp. of milk
- Wheat flour dough
How to make?
-  Heat some ghee in a thick bottomed wok. Add cinnamon, cardamoms, cloves, Shahi jeera and cumin seeds. Roast them till they change colour. Add the chopped onions and sauté.
-  Add the ginger paste, garlic paste and 4 tbsp. of water. sauté. Then add coriander powder, turmeric, red chilli powder, and tomatoes. Mix it well and sauté.
- Â Add salt as per your taste. Add the soya granules, green peas and green chillies. Cover the wok and let it cook.
- Â Cook some soaked rice in another vessel until they are a 3/4th cook. Add the coriander leaves and Garam masala to soya granules gravy and mix it well.
- Â Heat the oven to 175 degrees. If possible, take an earthen pot. Put a layer of half cooked rice and then add a layer of soya granules gravy and fried onions, mint leaves, rose petals and saffron.
- Â Sprinkle some Garam masala. Again put the layer of half cooked rice and then the gravy followed by mint leaves, fried onions, rose petals, saffron, and Garam masala.
- Â Place the lid on the pot and seal it with the dough. Cook it in the oven for 15 minutes.
- Â Take the pot out and break the seal. Serve it hot with the raita.
