Nothing could be better than a bowl of hot tomato soup in the chilly winter season. While tomato soup is one of the most common soup variant available in Indian restaurants, there are hardly any places which get it right. This particular situation leaves me baffled; is it that hard to make a good tomato soup?
Well, to me it is certainly not. Today in this recipe I will share with you a recipe to make the perfect tomato soup. Here is a step by step procedure of the same.

Ingredients:
Tomatoes- 4, large
Garlic- 2-3 cloves
Onion- 1, small
Bay leaf/tej patta- 1
Corn starch- 1 tsp.
Butter- 1 ½ tbsp.
Water- 1 cup + 2 tbsp.
Cream- ½ tbsp.
Bread slices- 1-2
Black pepper (crushed)- as per taste
Salt- as per taste
Sugar- ½ tbsp.
Procedure:
1. Wash the tomatoes really well and remove their stem.
2. Fill a pot with enough water so that the tomatoes may get immersed in the water.
3. Add a tsp. of salt to the pot and bring the water to a boil. Once the water has boiled, turn off the flame and immerse the tomatoes in it.
4. Leave the tomatoes in the boiling water for 20-30 minutes.
5. While the tomatoes are getting softened, chop the onion and the garlic
6. Now toast the bread slices on a pan, in a toaster or an oven until golden and crisp.
7. Slice the toasted bread into small bite-sized cubes.
8. Combine the cornflour with 2 tbsp. water and make a smooth paste.
9. Remove the tomatoes from the hot water and remove the peel of the tomatoes.
10. Chop the tomatoes and put them in a blender. Blend the tomatoes to a puree. Make sure there are no tomato chunks left.
11. Heat a pan and add the butter to it. allow the butter to melt on a low flame.
12. Now add the bay leaf and sauté it for a few seconds.
13. Add the chopped garlic and sauté for 10-15 seconds.
14. Now add the chopped onion and sauté until translucent.
15. Transfer the tomato puree, water, salt and pepper to the pan. Mix the ingredients well. allow the soup to come to a gentle boil.
16. Add the cornstarch paste to the soup as well.
17. Stir and simmer the soup for 4-5 minutes, until the soup starts to thicken up.
18. Now add the sugar and cream. Stir and allow the soup to simmer for 1 minute.
19. Serve the soup in individual bowls.
20. Garnish with toasted bread croutons.
