Aloo ki launji recipe is a very popular North Indian recipe which is a staple for lunch and dinner. It is very simple and quick recipe which is prepared with potatoes, tomatoes and lots of spices. So, try out this classic recipe at home and relish the rich flavor of this dish.

Ingredients needed for aloo ki launji recipe:
Potatoes- 4
Black cardamom- 2
Peppercorns- 8
Asafoetida- 2 pinches
Onion seeds- 1 teaspoon
Mustard oil- 3 tablespoons
Green chilli- 2
Bay leaf- 1
Tomatoes- 2
Granulated sugar- 1 tablespoon
Water- as per requirement
Chilli powder- 1 pinch
Turmeric- 1 pinch
Lemon juice- 1/2 tablespoon
Salt- as required
Coriander leaves- 1 handful

Now, how to prepare aloo ki launji:
First, take a blender jar and add cardamom and peppercorn to it.
Grind them into a coarse spice mixture.
Now, take a non-stick pan and add some oil to it.
Heat it over medium flame.
Then, add bay leaf, asafoetida, spice mixture and onion seeds.
Stir-fry all the ingredients for 2 minutes.
In the meantime cut potatoes into thin slices.
Then, chop tomato, and green chillies separately.
Now, add the chopped green chillies and sliced potatoes to the pan.
Mix all the ingredients well and cook.
Once the potatoes are tenderly cooked add turmeric, tomatoes, and red chilli powder to the pan.
Again mix all the ingredients.
After that sprinkle some salt and saute all the potatoes over medium flame.
Now, add lemon juice and sugar to the pan.
Stir all the ingredients until sugar starts to moisture.
After that add some water to the pan.
Cover the pan with a lid and let it simmer for few minutes.
Once the gravy becomes little thick, turn off the flame.
Transfer the prepared launji to a separate bowl and garnish with coriander leaves.
Your aloo ki launji is ready to be served.
