Nothing could be better than a hot bowl of soup on a chilly winter day. During winters one thing that I crave a lot is soups. Tomato, mushroom, hot and sour and manchow soup are my favourite ones. But since during winters, spinach is in the season I love to have spinach soup more often. We all know that green leafy vegetables are beneficial for our health. Thus, I try to incorporate it into my diet as much as I can.
Today I am going to share with you a very easy and healthy spinach soup recipe.
Here is a step by step recipe of the same.

Ingredients:
- Spinach- 2 cups
- Onions- ¼ cup (chopped)
- Garlic- 3 cloves (finely chopped)
- Gram flour- 1 tbsp.
- Cumin powder- ¼ tsp.
- Bay leaf- 1
- Water- 2 cups
- Butter- 1 ½ tbsp.
- Black pepper- as per taste
- Salt- as per taste
Procedure:
- Â Rinse the spinach leaves with water and chop them.
-  Heat butter in a saucepan and drop in the bay leaf. Sauté the bay leaf for 2-3 seconds.
-  Add the chopped garlic and sauté until the garlic is light brown in colour. Make sure not to burn the garlic. Keep the  flame on low while cooking the garlic.
- Â Now add the chopped onions and fry until the onions are soft and translucent.
- Â Add the chopped spinach, salt and pepper. Mix well.
- Â Now add the gram flour and mix again.
- Â Add 2 cups of water and allow the mixture to come to a boil. Let the mixture simmer for 3-4 minutes.
- Â Now add the cumin powder and stir again. Turn off the flame.
-  Allow the mixture to cool down. Once the mixture has reached the room temperature, remove the bay leaf from the soup  mixture and then blend the mixture with a hand blender. Make sure that the soup has a very smooth consistency.
- Â Taste the soup and add more seasoning if required.
- Â If the soup is too thick add some water to get the desired consistency.
- Â Put the soup back onto the stove and cook the soup for another 4-5 minute.
- Â Serve the palak soup hot.
