Ingredients:
- Potatoes- 2, medium sized
- Gram flour/besan- ½ cup
- Rice flour- 2 tbsp.
- Salt- as per taste
- Ginger garlic paste- ½ tsp.
- Carom seeds/ajwain- ½ tsp.
- Garam masala powder- ¼ tsp.
- Red chilli powder- ½ tsp.
- Turmeric- a generous pinch
Procedure:
- Wash and peel the potatoes.
- Slice the potatoes into thin slices and keep them stored in a bowl of water. This will prevent the browning of the potatoes.
- In another bowl add the gram flour, rice flour, ginger garlic paste, garam masala powder, turmeric powder, ajwain, red chilli powder and salt. Mix all the ingredients together.
- Start adding the water to it slowly to make a medium consistency batter. The batter should neither be too thick or too thin.
- Now heat oil in a kadhai. Add some batter into the oil to check the temperature of the oil. The batter should come to the surface quickly but should not get browned too quickly.
- Dip each slice of potato in the prepared gram flour batter and place it into the hot oil. Fry the pakoras until golden and crisp from both the sides.
- Remove the cooked pakoras on a kitchen paper towel and drain the excess oil.
- Serve the pakoras hot with mint coriander chutney and tomato ketchup.
