Baingan Bhaja Recipe

There is something about the Bengali food that once you try it, you get hooked and will keep coming back to it again and again. One thing that I really love about the Bengali cooking is that they always use mustard oil which gives a very distinct flavour to the recipes.

The Bengali dum aloo recipe that I shared some time back was a hit so I thought why not share another Bengali recipe. So here I am with the baingan bhaja recipe which is basically pan fried spiced brinjal discs. You can serve this as a side or a main dish. You can also serve it on its own with a yogurt dip or any dip of your choice.

So without any further due let’s get started with the recipe.

Ingredients:

  • Brinjal/baingan- 1, large (cut into slices of about ½ inch)
  • Red chilli powder- 1 tsp.
  • Turmeric/haldi powder- ½ tsp.
  • Garam masala- 1 tsp.
  • Dried mango/amchur powder- 1 tsp.
  • Rice flour- as needed (for dredging/breading the brinjal slices)
  • Salt- as per taste
  • Mustard oil- as required (for frying)

Procedure:

  1.  Wash the brinjal really well and pat dry the excess water with a kitchen towel.
  2.  Slice the brinjal into ½ inch thick discs over a big bowl filled with salt water. Soak the brinjal slices for 15-20 minutes in the salt water before you start cooking them.
  3.  Remove the slices from the salt water and pat them dry with a paper towel.
  4.  Place the slices in a bowl and add the ground spices and the salt. Rub the spices and salt really well so that all the slices are well coated.
  5.  Let the brinjal slices marinate for 6-7 minutes.
  6.  Now in a pan heat the mustard oil. coat the marinated brinjal slices with the rice flour from both the sides. Dust off the excess and place them in the hot oil.
  7.  Fry the brinjal slices in the oil until crisp and golden brown from both sides.
  8.  Remove the slices from the oil and place on a paper towel to drain the excess oil.
  9.  Serve the baingan bhaja with roti, paratha, bread or with any dip of your choice.
