There are several fried rice recipes out there but this one over here is one of my favourites mainly because of the basic/simple flavours and the sweet crunch that you get from the corn. Fried rice is one of the easiest things to prepare, all you have to do is cook some rice and fry it using your favourite ingredients or whatever you have in your refrigerator. Just customize it accordingly and you have a perfect lunch/dinner ready in no time.

Ingredients:
- Basmati rice- 1 cup (soaked for 30 minutes)
- Salt- ¼ tsp.
- Water- 3 cups
- Corn cob- 1, large (you can also use corn kernels)
- Spring onion whites- ½ cup (chopped)
- Capsicum- 1, small (chopped)
- Black pepper – 1 tsp.
- Rice vinegar- ½ to 1 tsp.
- Soy sauce- 1 tbsp.
- Spring onion greens- 3 tbsp.
- Oil- 2 tbsp.
- Salt- as per taste
Procedure:
- Â Rinse the rice in water 2-3 times or until the water runs clear and soak the rice for 30 minutes.
- Â Once the rice has soaked, rinse the water and keep the rice aside.
-  In a big pan or pot, add the water and ½ tsp. salt. Turn on the flame and bring the water to a boil.
- Â Once the water starts to boil add in the soaked rice. Stir the rice once.
- Â Cook the rice on a medium to high flame. Do not cover the pot while cooking the rice.
- Â Let the rice cook until it is partially cooked. Turn off the flame and strain the rice. Wash the cooked rice under running cold water in order to stop the cooking process. Fluff up the rice with a fork and keep it aside.
-  You can either boil or pressure cook the corn cob. In the pressure cooker, it will take around 2-3 whistles in order to get it cooked. Pour 1 ½ cup in the pressure cooker and cook it.
- Â Once the cob is cooked remove from the pressure cooker, let it cool and then extract the corn kernels from the cob and keep aside.
- Â In a wok or kadhai, heat the oil. Add the chopped spring onion whites and cook them for a minute on a medium flame.
- Â Now add the chopped capsicum and cook for another minute.
-  Add the corn kernels and sauté for 2-3 minutes.
- Â Now add the soy sauce and black pepper. mix really well.
- Â Add half of the rice and mix gently. Now add the remaining portion of rice and mix again.
- Â Season with salt.
- Â Add the chopped spring onion greens as well as the rice vinegar. Mix one last time.
- Â Serve the corn fried rice hot. you can accompany this with any Chinese gravy.
