As far as I can remember I have posted only 2-3 soup recipes till now. But since the winters are arriving and nothing could be more comforting than a hot bowl of soup during this chilly weather, you will see me posting a lot of soup recipes in the future. The soup recipe that I am going to share today is not a healthy one unlike the “Palak Soup Recipe”. This one is a thick, creamy soup which is very high in calories and is definitely not meant for health-conscious people. But, that being said, this one is a complete meal in itself. Serve it with a side of garlic bread or cheese breadsticks and you are sorted for dinner.
Here is a step by step recipe for the cream of mushroom soup.

Ingredients:
- Button mushrooms- 200 grams (chopped)
- Onion- 1 medium sized, finely chopped
- Garlic cloves- 2-3, finely chopped
- Bay leaf/tej patta- 1
- Nutmeg powder/jaye phal- 1-2 pinch
- Water- 1 cup
- Full-fat milk- 1 cup
- Cream- 6 tbsp.
- Whole wheat flour- 1 tbsp.
- Butter- 2 tbsp.
- Coriander- ½ tsp. (finely chopped)
- Black pepper- as per requirement (crushed)
- Salt- as per taste
Procedure:
- Heat a saucepan and melt the butter in it.
- Add the bay leaf and cook until fragrant.
- Add the chopped garlic and onion to the saucepan. Cook the onion and garlic until translucent.
- Add the chopped mushrooms to the pan and cook until the mushrooms start releasing moisture.
continue cooking until the mushrooms are light brown in colour. - Add the flour and keep cooking the mushrooms for 3-4 minutes while regularly stirring it.
- Add the crushed pepper and sauté for another minute.
- Add the water and then the milk to the pan. Mix everything well.
- Season with salt and start cooking the soup on a low flame.
- Bring the soup to a boil and allow it to simmer for 4-5 minutes on a low flame.
- Add the cream and the chopped coriander to the broth.
- Cook the broth for another 2-3 minutes while stirring regularly.
- Lastly, add the nutmeg powder and mix it one last time.
- Turn off the flame and serve the soup hot.
