I have never been a fan of the frozen food. Though it might be convenient but you never get that taste which you get from fresh food. When it comes to finger food I always like to prepare the dishes from scratch. Today’s recipe is an appetizer/snack that you can prepare for your parties or as an evening snack. It is a very healthy recipe if you replace the deep frying with a healthier cooking option such as shallow frying or baking.
So without any further due let’s get started with the recipe.
Ingredients:
- Potatoes- 5, medium sized (boiled and mashed)
- Green peas- ½ cup (boiled)
- Carrot- 1, small (grated)
- Capsicum- 1, small (finely chopped)
- Ginger garlic paste- ½ tsp.
- Mixed herbs- ½ tsp.
- Red chilli powder- ¼ tsp.
- Garam masala- ¼ tsp.
- Black pepper- ½ tsp. (crushed)
- Coriander leaves- 1 tbsp.
- Roasted besan/cornflour- 3 tbsp. + 2 tbsp.
- Cheese- ¼ cup (grated)
- Oats- ½ cup (coarsely ground)
- Water- 2 tbsp.
- Oil for deep frying
Procedure-
- Â In a bowl add the mashed potatoes, boiled green peas, grated carrot and chopped capsicum.
- Â Add all the ground spices, salt and herbs.
- Â Now add the besan/cornflour and the grated cheese. Mix everything really well.
- Â Add the ground oats and mix again. Check the seasoning.
- Â Now divide the mixture into small lemon sized portions and make into little nugget shapes.
- Â Once all the nuggets are ready, combine 2 tbsp. besan/cornflour with 2 tbsp. water and keep aside. Also, take out some of the ground oats on a plate for breading the nuggets.
- Â Dip the nugget in the flour liquid first and then roll it in the ground oats so that the nuggets are well breaded from all the sides.
- Â Heat oil in a frying pan or kadhai and deep fry the nuggets till golden and crisp.
- Â Serve the veg nuggets with ketchup or your favourite dipping sauce.
