Pulao is an easy-to-make dish, that can be cooked with various ingredients and in different flavors. But, in this recipe, you will learn an amazing rice dish, which has dominating mint flavors, combined with many other spices and vegetables.
There are various methods to cook this dish, but here we have used a pressure cooker to make this mint pulao. Serve this delicious dish with plain curd or boondi ka raita. Follow the instructions carefully to get the desired taste of the dish.

INGREDIENTS:
For The Mint Paste:
1 cup of fresh Mint Leaves (Pudina Patti), chopped
½ cup of fresh Coriander Leaves (Dhaniya Patti), chopped
1-2 finely chopped Green Chillies
½ teaspoon of chopped Ginger
½ teaspoon of chopped Garlic
2 tablespoon of grated Coconut (fresh or desiccated)
1 teaspoon of Coriander Seeds
½ teaspoon of Cumin Seeds
2-3 tablespoons of Water for grinding the paste
Other Ingredients:
1 cup or 250 grams of Basmati Rice
2 Cloves (Lavang)
2 small Cardamom (Chhoti Elaichi)
1-inch piece of Cinnamon (Dal Chini)
1 small-medium Bay Leaf (Tez Patta)
2-3 single strands of Mace
1 thinly sliced medium-sized onion
1 finely sliced small Tomato
1 peeled and chopped, medium-sized Potato
½ cup of Frozen Peas or fresh heaped Peas
¼ teaspoon of Turmeric Powder
¼ teaspoon of Red Chili Powder
1 ½ or 2 cups of Water
Salt as per the requirement
HOW TO PREPARE:
Take the rice in a large bowl and rinse them under running water until the water is clear of the starch.
Now soak the rice in water for 30 minutes. Drain and set them aside later.
Meanwhile, prepare the mint paste. For that, pour mint leaves, coriander leaves, cumin seeds, garlic, ginger, coconut and green chillies in a grinding jar. Add water and grind all the ingredients into a smooth paste.
Now, put the pressure cooker on medium flame and pour the oil in it to heat.
Then add whole spices like small cardamom, clove, mace strands, bay leaf, and cinnamon into the heated oil and fry until they become aromatic.
Now add onion and sauté until it becomes golden brown.
Then add the mint paste, turmeric powder, red chili powder and mix well. cook the masala mixture for 2 minutes.
Next, add the potatoes, tomato and peas into the cooker and stir well.
Now add the soaked rice and stir gently without crushing the rice. Sauté for a minute.
Add water & salt and stir gently again.
Now, cover the lid of the cooker and pressure cook for 2-3 whistles or until the rice are well cooked.
Turn off the flame and let the pressure settle for a few minutes.
Serve hot with plain curd or boondi
