Palak Paneer is tasty yet sumptuous Indian cuisine. It is basically soft paneer pieces soaked in the gravy made up of spinach mainly. This dish goes well with roti, naan aur even rice. You can use tofu in place of paneer. It would taste equally good. So find a quick recipe for Palak Paneer below.

Ingredients:
For Spinach Puree:
- 250 gms Spinach
- 1-2 green chillies chopped
- 1-inch ginger piece, chopped
- 2 garlic cloves chopped
- 3 cups water for blanching
- 3 cups water for rice.

For Palak Curry:
- 1 medium sized onion, chopped
- 1 medium sized tomato chopped
- 4-5 chopped garlic cloves
- ½ tsp cumin seeds
- ½ tsp red chillies
- A pinch of hing
- ½ tsp of Garam masala
- 250 gms Paneer
- ½ cup water
- 1-2 tbsp. fresh cream
- 2 tbsp. butter
- 1 tsp Kasuri methi
- Salt to taste
- Garnish:
- 1 tsp cream
- ½ inch ginger julienned
- Lemon slices
How to make Palak Paneer?
- Â Rinse the spinach leaves. Boil 3 cups of water in a pan and add 1/4tsp of salt. Soak the spinach in the water and cover it with a lid for 2-3 minutes.
- Â Take the leaves out of the water.
- Â Add these leaves in a bowl containing icy cold water. this preserves the green colour of spinach.
- Â Drain the icy water and then blend the spinach in the blender with ginger, garlic and green chillies.
- Â Grind it into the smooth puree. Keep it aside.
- Â Heat some oil in the pan on low flame. Add the cumin seeds and let them roast. Add the bay leaf.
-  Add the chopped onion and sauté them.
-  Add the chopped garlic and sauté till the smell of garlic goes away. Add the chopped tomatoes. Stir and sauté till the tomatoes become soft.
- Â Add turmeric powder, red chilli powder and hing.
- Â Cook it well. add the Palak puree to it.
-  Mix it well. add ½ cup of water and keep stirring it.
- Â Simmer it for about 5-6 minutes till the puree is cooked. Add salt.
- Â Add the Garam masala when the gravy thickens.
- Â Add the paneer cubes. Simmer it on low flame till the paneer soaks some gravy.
- Â Turn off the heat. Serve it hot with naan or rice. Garnish it with cream or butter.
