All we want to do this summer is to eat something cold all the time. And the kids can’t resist themselves eating those Matka Kulfis from the roadside vendors. But why to let them eat there when you can prepare it at home? So for your sweet tooth and midnight sweet cravings, we are going to tell you the simple recipe to make Malai Kulfi at home.
Ingredients:
- 1 litre of full-fat milk
- 250 ml cream
- 1/3rd cup powdered sugar
- 6 cardamoms
- 12 chopped pistachios
- Few strands of saffron soaked in milk
The above-mentioned quantity of ingredient is to make Malai Kulfi for 6 persons.
How to Prepare Malai Kulfi?
1. Heat some milk in a pan. Make sure that the pan is wide-bottomed. Bring it to boil. Boil the milk until the quantity becomes just half. Keep stirring it continuously.

2. Add powdered sugar, cardamom powder and chopped pistachios.
3. Mix the ingredients well while cooking it on the medium flame. Cook it until the quantity becomes just 1/3rd of the original.
4. Turn off the flame when the consistency becomes thick and rabdi like.

5. Allow it cool down.
6. Place it in the fridge for few hours.
7. Pour the cool mixture into the kulfi moulds and keep it in the freezer overnight.
8. Once you feel that the kulfi is set, transfer the kulfi moulds into a bowl of lukewarm water. Hold it in the warm water for only a few seconds. Scoop out the kulfi into the bowls.
9. You can also insert ice-cream sticks to make it like the stick kulfi.
