Mirchi vada is the typical Rajasthani recipe. It is made by stuffing bhavnagri chilies with a spices potato stuffing, dipped in gram flour batter and then fried in oil. It is mostly served as a snack or side dish and is extremally popular in Rajasthan. Here is a step by step recipe of the same.

Ingredients:
- Potatoes- 4 medium (boiled)
- Green chilli- 1 chopped
- Bhavnagri chili- 8-9
- Coriander leaves- 2 tbsp.
- Fennel seeds- ½ tsp. (crushed)
- Coriander powder- ½ tsp.
- Amchur powder- ½ tsp.
- Cumin powder- ¼ tsp.
- Red chilli powder- ¼ tsp.
- Asafoetida- a pinch
- Salt- as per taste
- For the batter:
- Gram flour or besan- 1 cup
- Water- ½ cup + 2 tbsp.
- Asafoetida- a pinch
- Red chilli powder- ¼ tsp.
- Baking soda- a pinch
- Salt- as per taste
Procedure:
-  Wash the bhavnagri chilies under running water and set aside for the water to drain off. Wipe the chillies with a clean  kitchen towel to get rid of any excess water.
- Â Remove the crown of the chilies and slit them from one side. Remove the seeds from the chilies and set aside.
- Â Peel the boiled potatoes and then mash them while they are still warm.
-  Add the coriander leaves, chopped green chili, coriander powder, fennel seeds, cumin powder, dry mango/amchur  powder and red chilli powder. Mix all the ingredients really well.
- Â Stuff the bhavnagri green chilies with this potato and spice mixture.
- Â Now in a bowl take the gram flour red chili powder and the asafoetida.
- Â Add water to the gram flour to make a thick batter. Add salt to the batter and mix well.
- Â On a medium flame heat up the oil.
- Â Now dip the stuffed chili in the prepared batter from all the sides and fry it in the oil until golden and crisp.
- Â Remove the vadas on a kitchen towel.
- Â Serve the mirchi vadas with tomato ketchup and lemon coriander chutney.
