Want to satisfy your sweet tooth while on fast? Then do try this sumptuous makhana kheer recipe that I am going to share with you today. This recipe is again one of those recipes which I have been eating since my childhood. In fact, in my house, this recipe is not just restricted to fasts and is prepared on regular days as well. If you haven’t tried it yet, then you are missing on some good food right now. So do try this recipe and I am sure that you are going to love it.
Here is a step by step recipe of the same.

Ingredients:
Makhana/foxnuts- 1 cup
Full-fat milk- 2 cups
Green cardamom powder- 1/8 tsp.
Cashews- 10-12 (sliced)
Almonds- 10-12 (sliced)
Raisins- 1 tbsp.
Sugar- 4 tbsp.
Saffron- a pinch
Ghee- 2-3 tbsp.
Procedure:
1. Heat ghee in a pan and roast the makhana along with the cashews and the almonds.
2. Roast the dry fruits in the ghee until the nuts and the makhana are toasted and crunchy. Though make sure to stir them at regular intervals to ensure even roasting.
3. When done, remove in a bowl and keep aside.
4. In a pot, heat the milk. Make sure the pan is a thick bottomed one otherwise the milk may get scorched at the bottom of the pan.
5. Keep stirring the milk at regular intervals.
6. While the milk is boiling you can start with the other step which is grinding the makhanas.
7. Transfer 2/3 of the makhanas to a grinder along with the saffron.
8. Grind the makhanas to a fine powder.
9. When the milk starts to boil add the sugar.
10. Then add the ground makhanas in the milk along with the whole ones.
11. Add the cardamom powder and mix really well.
12. Keep cooking the kheer until the milk has thickened a bit and the makhanas have softened. This will take about 8-10 minutes on a low-medium flame.
13. Keep scrapping the sides of the pan and add the solid contents back to the boiling kheer.
14. When the kheer is almost ready add the roasted nuts and the raisins.
15. Mix and cook for 2 minutes.
16. Turn off the flame and serve the kheer hot or chilled.
