Yummy Milk Cake Recipe

If you have grown up in North India, then you must have eaten the very famous milk cake. And for those who don’t know about this sweet, let me tell you that it is not actually a “cake”. It is an Indian dessert, which prepared with curdled milk and sugar as the main ingredient. At first it may sound weird because when you hear about curdled milk you can hardly imagine it turning into a sweet. But it is one of those sweets which are totally addictive. Sweet lover or non-sweet lover, once you eat it you will be hooked onto it for a lifetime.

You can easily get it at almost every sweet shop in the north India. But apart from that, you can easily prepare this delectable sweet at your home too. So today we are going to share with you this easy to follow milk cake recipe with the help of which you can prepare it yourself.

Ingredients:

  • Full-fat milk- 6 cups
  • Lemon juice- 3 tbsp.
  • Sugar- ½ cup
  • Cardamom- 1/8 tbsp.
  • Ghee- 2 tbsp.
  • Pistachios- 1-2 tbsp.

Procedure:

  1.  Grease a 6-inch baking tray or cake tin with some ghee and keep it aside.
  2.  In a heavy bottomed pan, start heating the milk and let it come to a boil.
  3.  Start adding the lemon juice little by little so that the curds won’t separate from the whey immediately.
  4.  Boil the curdled milk for 5 minutes and remove 1 ½ cups of the whey. Doing so will ensure that your milk cake is not too tart.
  5.  Keep cooking and stirring the curdled milk till you get a grainy texture and the whey has almost evaporated. This may take around 10-15 minutes.
  6.  At this point add the sugar and cardamom to the mixture and keep stirring. Soon the mixture will start to come together.
  7.  Now you can cook the mixture anywhere from 5-10 minutes, depending on the color you are looking for.
  8.  Now pour this mixture into the greased tin or tray and spread it really well. Sprinkle the pistachios on top and let the milk cake set.
  9.  After an hour, you can slice the milk cake in the desired shape and serve.
