This one is a dry chicken fry recipe but made in Andhra style. This particular chicken fry recipe is very famous in the Andhra region and is regularly prepared in every household. Though the recipe may vary slightly for different places but the one that I am going to share with you today is the perfect one according to me. So without any further due let’s get started with the recipe.

Ingredients:
- Chicken- ½ kg
- Curry leaves- 1-2 sprigs
- Green chilli- 2-3
- Black pepper powder- ½ tsp.
- Cashews- 12 (powdered)
- For the marinade:
- Lemon juice- 1 ½ tbsp.
- Turmeric- ¼ tsp.
- Red chilli powder- 1 tbsp.
- Onions- 2, big (finely chopped)
- Ginger garlic paste- 1 tbsp.
- Ghee- 1 tbsp.
- Salt- as per taste
- Water- 2 tbsp.
- Garam masala powder:
- Coriander seeds- 2 tbsp.
- Cinnamon- 2-inch stick
- Cloves- 8
- Cardamom (green)- 4
- Cumin- ½ tsp.
- Fennel seeds- ¼ tsp.
Procedure:
- Â In a bowl, mix all the ingredients required to prepare the marinade as well as the garam masala powder. Once the marinade is ready add the chicken to the marinade and mix it together. Set the chicken aside for 15 minutes so that all the flavours get soaked up in the chicken very well.
- Â In a pan cook the chicken on a low flame until it is tender and cooked. If the chicken looks dry you can add a little water to it. Once cooked put the chicken aside.
- Â Heat oil in another pan. Add the green chillies and curry leaves and fry them. The curry leaves should get crispy.
-  Now transfer the cooked chicken to this prepared tempering and sauté the chicken on a high flame. You don’t need any moisture in the chicken.
- Â When all the water is absorbed, add the pepper powder and the cashew powder to the chicken. Stir and cook for another 3-4 minute.
- Â Garnish the chicken with fresh chopped coriander and serve.
